I absolutely LOVE puttanesca! I was first introduced to its brilliance when my friend Chelsea's mom made it when we had a weekend at her amazing house up in Arlington, WA on the river. Although the ingredients seem simple, the sauce should be simmered for a long time to get all the flavors out of the tomatoes, kalamata olives, capers, and some fresh parsley to top it off. Put it over your favorite pasta with a little steamed lemony kale on this side and you're set!
